In my opinion this wine is perfect to drink now. On the nost the champagne showcased ripe citrus, red apples, salinity, lemon curd, and hints of ripe pineapple. On the palate the wine was extremely fresh and precise but with just a hint of maturity which made this wine super delicious and complex. The bubbles were fine and pleasing. Wine Ramblings belated birthday gathering at ESK. To pair with oysters. Drank in Gabriel Standart. Appearance is clear, pale intensity, yellow lemon colour. Thin legs. Nice bubbles. Nose is clean, medium+ intensity, with aromas of oyster-shell minerality, stony minerals, citrus lime. Developing. On the palate, dry, high acidity, medium- alcohol (12.5%), medium body. Medium+ flavour intensity, with flavours of citrus lemon-lime, wet stony minerality, oyster-shell, toasty brioche, touch of honeyed nut, almonds. Zippy long finish. Very good quality. Nice development. Really like the minerality here.

Lemon and lime, lime zest, green leaves, grass. High acidity is usually something I like but in this case I think it was to unripe, a grenish tartness in the finish. The fruit doesn't follow up in the finish. Better with more time but never really good.
