Pop and pour Nose - hawthorn/rhubarb, lemon curd, custard. Slightly Smokey/dusty. The hawthorn surprised me. Rather interesting and I would not have guessed Chablis if blind. Palette - quite concentrated, citrus, wet stones. There is a touch of flint/reductiveness. There’s a nice silky viscosity. Dances a little on the finish but is not incredibly long.
After 1 night slow ox in bottle with the cork in, this has really evolved… Nose - less hawthorn, lemon curd is now in the background. Some burnt caramel, sweet white orchids. There’s still some alcohol on the nose.
Will be much better in 3 years.

Tasted blind. This has immense concentration, flint, crushed rocks, lots of fruit and acidity yet it all sits together really well. I was surprised it’s a Chablis, it’s super rich. No rush to drink but it’s awesome.

Blind tasting. Pnp in Zalto. Nice nose of shy orchid and candied papaya. Palate super straight and reducted: very mineral tending to an "organic" style. Dried hay, golden dried wheat. Needs hours of decantation to shy a classic peeble stone, pineapple, and singular curcuma. That is a great personnalised Chablis 1st cru. 89 at first kiss, 93 after one night (of aeration). Great potential.

All of Thomas Pico's wines have these unique characteristics that set them apart from other Chablis producers...they have their own personality, likely from minimal intervention in a region where that's really difficult to execute.
This one I actually Coravined about 6 months ago and came back to finish it this weekend. Was still drinking incredibly, I wouldn't have been able to tell the difference from a full bottle. Really looking forward to seeing how this and the Vaillons develop.

Hosted a tasting for a group of longtime wine friends. N citrus rind, apple, cheesy rind. P hints of tropical, citrus, little funk, saline F long in length, nice mouthfeel, and high acidity. Overall an interesting wine by Pico, probably the closest to typical chablis, that I've had from him. 50+5+9+11+17 4
