The wine was decanted for 90+ minutes and consumed over an additional 4 hours. The stemware was Sensory and it was paired with Applewood smoked pork cap for a Pig and Pinot pairing!
The wine definitely mproved over time. The nose was of dried flowers, red fruits, and spice. Initially, it was out of balance. The palate was od red and dark cherries and brown spices. It started medicinal but the thick syrupy medicine flavor integrated and dissipated with extended airtime. Once it reached the 3+ hour it started to resemble and elegant but traditionally spicy/earthy West Slope.
I think this bottle needs a few more years in the cellar or a several hour decant. It's not the beat West Slope I've had but it was enjoyable, especially near the end of the night with extended air.
