  • Lovely aged burgundy. Tart dark cherry/cassis fruit, lots of sous-bois and black tea and mushroom. Very savory, a little more structure than concentration left here, so on its own it seems just a tad rustic, but with food the structure melts away and the fruit intensity comes through. Old Chevillon really shines with food.
