Deep yellow/orange, looks like a lighter Belgian ale. Complex bruised fruit character (it contains at least 7 apple varietals), truly dry impression, and a lot of soil which I don’t usually taste in cider. Very good but I’m not sure I’d hold it any longer.

My first sydre. Don't think it'll be the last! Sparkling, with a light bead. Smooth and very sophisticated, excellent length, fruit shows nicely--although I'd never guess it was apples! A sure hand made this, not rough or awkward at all, but refreshing and ruminative.
Went well with chicken piccata.
After a day in the fridge under N2 it was, if anything, even better. Gained maturity. Two days later the remains were, unfortunately, past it. Still drinkable, but the magic was gone.
