This was really very good. Quite tight, but opened up fairly quickly. Some apple, flint, brioche, a slight nutty and waxy oxidative note giving added complexity, but still quite fresh in style. Really loved this, and this has upside.

Initially, light funky natty notes that blew off and revealed a wound up and linear Champagne. Over an hour, this loosened up a bit. Light aromas of salty biscuit, apples, and nuts. Moderate flavors of apples with hints of salty biscuit dough. Dry. Long-lingering finish. Moderate complexity. Some elegance. Medium body. Moderate+ acidity. I think this needs a couple more years to come together. 92+

New grower champagne (Empire Chinese Cuisine): 50% C, 50% PN, harvest 03 Sept 2018, tirage 20 Aug 2019, disgorge 06 Jan 2023, 2797 bottles. Blind. Aroma of almond with some ginger and spice. Good energy on the palate, creamy with sesame oil, high acid, med finish. Excellent finesse. As it opens up, aromas became more prominence. Voted 2nd best bottle out of 6.

Pale yellow with some green highlights. On the nose beautiful apples, fresh lemon, beeswax and biscuits. Intense but seamless and silky at the same time. On the palate very fine mousse and even more apples. Perfectly ripe, fresh, sweet, crisp apples on a bed of chalky cream and breadcrumbs. Utterly elegant and smooth with no hard edges but lots of energy. The fruit is absolute top notch, both sweet and fresh. I would never have guessed this is brut nature. Very long finish with more of those lovely apples. Stunning wine! No idea how it will age but see no need for cellaring as it is drinking so well now.
