I've said it before but it's worth repeating: Sauvignon Blanc is amazing with some age on it. In time the green notes subside and give way to amazing tropical fruit flavors. The in-your-face grassiness also fades to a nice vegetal/mineral undertone. This wine was quite complex with layer upon layer of fruit flavors dissipating into a medium-long mineral driven finish. The last tasting note on CT was from 2yrs ago. It's terrible to have missed out on the development of this juice...
Please, please do yourself a favor and experiment with aging white wines.

clear, pale intensity, lemon, subtle stronger lemon highlights, lemon core leads to white watery miniscus clean, medium+ intensity, yellow-fleshed pitted fruit such as firm nectarine, tight-skinned peaches, marigold flowers palate: dry, acid is medium plus, tannin zero, body is medium plus, alc is estimated medium 13.8, length is medium+ and slightly bitter finish is of crushed marigold flowers Quality statement: Good concentration of firm, fresh fruit balanced by refreshing acidity. The wine has the body to pair with dishes that have more texture, such as riosotto in a lighter cream sauce, varius vegetarian pastas assuming a light sauce, omelets...firmer textured white fish.
