Great acidity. Tense texture. Dry. A blend of citrus, salinity, stony minerals, and remnant faint wood which imparts a bitter note that I am not sure I like, but I don't mind observing. Very interesting wine after twenty-two years in bottle. The wine feels like a combination of the acidity and slightly higher alcohol levels stopped its development and froze it in time.

I seem to have struck lucky having seen recent reviews with the wine showing no sign of over age or premox. Admittedly its best years are now starting to come to an end, but it is still a classic top notch Chablis, albeit not one that is going to be something special. Showing great clean flavours of lemon, grapefruit, and oyster shell with good minerality and restrained oak, only the finish belies its age with it being a little tired. All in all it is a very enjoyable Chablis Premier Cru, but it is time to be drinking any remaining bottles.

200 Burgundy Grand Crus from vintage 2000, 4-day blind tasting (Singapore): A bit lighter and on the mid palate not so persistent, missing the extra mid palate weight that the other wines had in this stellar fllight.

The label on this may as well be "DEAD DOVE. Do Not Eat."
