The mouth attacks gently with a nice freshness. Then we slowly go up in range and in power, the aromas develop, always very fruity at first, but the wine unwinds, we start with very powerful tertiary aromas, a feeling of cocoa in the mouth, to come back to rest on dried flowers. The balance is perfect, the wine sings its score without missteps. We evoke several registers which are played to perfection, with ample substance and well-cut acidity. Its youth and its polymorphous character really enchanted me, it almost feels like drinking a different wine with each sip. The finish is of the same ilk, fine but long, fresh, on fresh fruits such as peach.

Les’s bottle. Dramatically deeper, richer, more powerful than the standard ‘85 - to me and one other person. But the other 6 all thought it was corked.

(Dom Pérignon Œnothèque) The wine for this release, or plénitude, was disgorged in 1999. It is a rich golden-yellow, with a yeasty, lemony nose and a crisp, nutty palate. Notes of vanilla bean and violet add complexity. 1985 was a difficult, hot vintage, so the wine is fairly one-dimensional, but an excellent snapshot nonetheless. Winery Spotlight: Dom Pérignon

Next to 85 Krug. Fresh, hazelnut, popcorn, sweet, vanilla, caramel, apricot, lemon. Still quite young, decently large, requires patience. 94
