  Has matured nicely. Buttered brioche with a steely backbone and generous on yellow apples and lemon with some fresh chervil.

  Pale green, nose of aniseed, pastis, powerful liquorice. Taste is clean, fresh, saline mineral with some apple crunch with mouth watering acidity. Good.
