Normally I do not drink on Monday's but last night was a beautiful night in NJ and I was putting a big porterhouse on the grill so I had to open a cabernet. I opened and slow ox'd for two hours. Dark fruit and mocha on the nose. The palate was dark berries, plums, tree bark and mocha. The finish was moderate to long. Went really good with the steak and grilled peaches that followed.

Another contribution for the wine event. This and the 2003 Bressler tied for WOTN. Smooth and flavorful with flavors similar to my last note. I should look into buying more Corliss!

Similar to my notes of last winter. A beautiful aged cabernet. Opened and slow ox'd for three hours. Dark fruit on the nose. The palate is dark berries, plums and mocha. The finish was moderate to long. Served with a dinner of leftovers that I found in the fridge.

(Corliss Estates Cabernet Sauvignon Columbia Valley) An aromatic powerhouse with mocha, herbal notes, black cherries, black licorice, and spice box. The palate is dense and perfumed with rich waves of mouth coating dark fruit flavors accented by barrel notes and a silky texture. The finish lingers long and effortlessly. An absolutely beautiful, multiple swallow wine - among my favorites from this winery - that is drinking beautifully right now but has a long, long drinking window in front of it. The barrel influence is not shy here but has the fruit to match it. Cabernet Sauvignon, Cabernet Franc, Merlot, Malbec, and Petit Verdot. Stillwater, Bacchus, Dionysus, and Weinbau vineyards. Aged in French oak (80% new) for 33 months. 15.1% alcohol. 624 cases produced. Sample provided by winery.
(Corliss Estates Cabernet Sauvignon Preliminary Blend Columbia Valley) Beautifully refined and balanced fruit and tannins. A plush, full wine that is all about power. Nose is still elusive but the taste delivers.
