  • Slow-oxed for 3 hours upon serving into Zalto Burgundy glass (“No” day): Pale ruby to the eyes. Bright colours.

    Red raspberries driven. Florals, white spices.

    Very high acidity, good persistency on finish. Very fine boned indeed and more about purity than complexity now.

    93 points at this stage.

    Second round: root and woody notes, liquorice.

    3rd round: more nutmeg and cinnamon sweet spices notes now. Highly mineral on palate too. Very complex spices that sparkles. More like 94 points now.

    4th round: a lot more finesse and integration now. With almost vanilla like woody spices, nutmeg.
