  Initially quite chalky and opens up without really hitting it. There is considerable bottle variation in 2007 and this was a medium bottle which was not too old but still I have had better bottles than this.

  Restrained is the word that comes to mind. Which actually makes me want to drink more of it and explore. More mineral, less tropical, with restriction. Very interesting but I am not sure why. Could be good, could be bad, or it could just be tight.
