Ripe, full-bodied fruit in the mouth with excellent depth and length and well-integrated tannins and oak. Very silky and thick on the palate. A delicious Napa Cab at the sweet spot of maturity.  Tasted by Cholera on 8/22/2015 & rated 95 points: This was the hit of the night tremendous bottle. We started with a very well-balanced Pinot Noir to pair with Thai food. We then allowed the Darioush to decant for approximately 45 minutes. The initial nose was very tight with balanced tannins on first sip. As the bottle allowed to breathe, there was tremendous balance in stone fruit and mild oak, licorice, toast and casis, with a long, enduring finish. The long finish and the nose of the wine were tremendous. As the vapors Permeated the nasal passages it change the profile of the wine to one of almost a ethereal, silky, luxurious and buttery mouthfeel. This is a very well-balanced and finely tuned wine, drinking
very well now and likely to do so for several more years. Its definately not passed prime. I thought the 2007 vintage was very good, imagine laying that bottle down for another 10 years. Drink up you won't be disappointed. (3708 views)

Initially I was not getting anything on the nose, but flavor was good 90pts. Over the next hour the wine kept on improving to our pleasant surprise. Wine ended up being terrific and was actually better than the 07 that we tasted this against. WS identified this wine as being one of the best from that vintage in a retasting recently, I agree! Ninety minutes later, with some manchego and a grilled filet the pairing was complete. The tannins were soft, the finish was long and the depth of dark fruit permeated the mouth.  Tasted by tcufletch on 10/8/2011 & rated 90 points: Bought this four years ago after having a bottle at Bob's Steak and Chop in Dallas. The first red wine that my wife really got into. It was very nice that night and was still enjoyable tonight.

Very easy drinking and better with food as it showed more acid that went well with a steak. Some of the tannins seem to have disapperaed. The nose wasn't as strong as I remembered and was hoping for but that may have been due to the fact that I was in the midst of cooking dinner. Dark fruit, earth, light cocoa, and menthol in the mouth but very nice, smooth and balanced; still had some complexity and you could tell that it was well-made. Medium finish. (1965 views)

Round and smooth with notes of cassis, plum, and blackberries. A touch of sweet tobacco and espresso towards the finish. While utterly delicious, the low acidity (some might say it's flabby even) and fully-integrated tannins tell me that this wine should be consumed in the relatively short term. 91-92 points. Ripe, balanced palate of beautiful dark fruit, minerals, mint, and espresso. Wonderful length. Silky texture. Pleasant acidity. Supple tannins. The oak is much more integrated than last time I drank this. Outstanding! Probably won' get better than it is right now. (3497 views)

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
