Crisp apples, dried apricots, subtle hints of baking spices, a whisper of fresh berries. Mmm-mmm! Its finish is long and satisfying. Served in those fancy Riedel champagne glasses with the very tall painted stem. This champagne is immediately explosive, with a powerfully floral nose hitting the high notes atop a thick bouquet of orchard fruits, especially ripe apple, sweet pear, and some quince. The back end of the palate is really clear sourdough bread, and a slightly saline note note emerges. Followed over two hours, the fruit and bread notes get deeper, but the saline note also becomes slightly more assertive.
That was just the nose. The palate is again rich and full, with a deep core of fruit on the mid palate evoking all those golden orangey orchards. The tail end of the middle picks up a squeeze of lemony acid that segues into a strongly chalky mineral driven but well cut back end. The finish is so long and so detailed, and brings back the pear but adds some cream, some warm spices, and even some sharp herb.
This is a beautiful and powerful champagne, everything fitting together perfectly and hitting from the get go but deepening with time in the glass. A wow experience. Some power in there, but I'd say elegance was what I was left with. Insanely balanced. Needed 30-60 mins in the glass to shine. We always worry with ageing Bollinger but this has no issues and felt it would live another 10 years easily . Round , rich but with firm structure too and actually some found it a touch too sharp vs the expected round and rich that Bollie RD usually is. Soft toast , big and bold champagne and really a very solid one. Maybe among the most promising of its kin we have crossed paths for a long time. Well it is a 2008 after all and what a testament/hommage to the vintage this is. 93-94 for now but with promise. This is 70% PN and 30% Chardonnay. Excellent pairing with 25m Gruyère selected by Bernard Antony. Crystalline lemon candy aromas, apricot and coconut all come out when paired with the Gruyère. In hindsight this was the best pairing of the trip. Coconut kept coming to the front of this pairing, very unexpectedly. Pale lemon color next to the 2002 Grande Annee. With the dessert course of a pear tartlet, almond cream, pears and chalk flavors emerge. Excellently mirrored pairing, full of layers. Wildly wonderful set of wines. Lots of complexity yet still very fresh having been recently disgorged. If you kept in bottle it would continue to evolve and become more toasty etc. Exceptionally fine bubbles. Complex and opulent. Very long finish.

Aromas of baked apple, a touch of (singed hair), cinder toffee – a sense of richness yet surprisingly delicate… I totally agree with William Kelley’s Fino note. Chalky too, the nose feels silky and very fine, and super fresh.
The palate has a precise attack, very clean and pure, tasting of mineral pools or alpine stream, it feels vinous and tense, cool and fresh with lots of mineral and phenolic grip, and a touch of salinity. Silky, subtle creamy flavours, wet stone… really lovely and poised. Champagne - The French region of Champagne (including the cities of Rheims, Épernay, and Aÿ) was the first region in the world to make sparkling wine in any quantity. Today, the name of the region is synonymous with the finest of all sparkling wines, and wine-making traditions of Champagne have become role models for sparkling wine producers, worldwide. Surprisingly, the region of Champagne is now responsible for only one bottle in 12 of all sparkling wine produced.
