Great fruit and totally balanced. Great weight, and power and fruit.....love this wine. It was the second......still pretty dark garnet in the glass. Traditional nose of Cab with graphite. Palate of dark red fruit, smooth and everything integrated. A 91-92. The key with this one is what happened after another 2 hours of air. Fruit deepened, darkened and the wine gained complexity as well as weight. It really filled out. Easily 2-3+ points better by the end. The raspberry fruit became almost blackberry and very liqueur-like at that point. Would like to have seen what another hour or two would do here, but I finished it. I have one bottle left and will give it plenty of air, whenever I open it! These have plenty of years ahead of them. Fresh blackberries, blackberry compote, hint of blackberry jam, black cherry, cola, woody, but only a hint of cedar, pine forest, dried tobacco, pencil lead, juicy mid palate leading to a long finish. This was juicy but not tart. Robust aromas from the glass.
Minimal bricking around the edges of this black beauty with a touch of purple hue. Nice fine tannic backbone that carries everything along. Plenty of acid to age gracefully many more years. At 15 years old, this wine felt refined yet somewhat young, but a real treat to enjoy. For my palate, this was the right time to open, sadly my last. Decent finish but not overly long nor deep. Decanted for one hour and drank over a couple more. Not much improvement with time but appears to be at a nice drinking point. WA anticipated maturity 2018 to 2033 so maybe this vintage just needs some more time. Drank next to a 2015 Hall Jack's Masterpiece which was quite a bit better in my opinion - bigger/fuller fruit, longer/deeper finish, more character/fuller flavors, etc.. Tannins are refined and the finish is medium-long. It didn't, however, excite my whole palate. Many of the earthy tones lingered through the finish, but the fruit just never came alive. | Dunn Vineyards Producer websiteCabernet SauvignonCabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.
Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet SauvignonUSAAmerican wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers.
