A very fine, delicate mousse, bright acidity and minerality. Light fruits, pear comes to mind, almond, honey. Not getting the lemon zest others mention, which is good for me, as a prefer less lemon in my bubbles. (1811 views)

 Tasted by devraj on 3/13/2024 & rated 96 points: Light yellow in color with small beads. Fabulous nose of yellow florals, Meyer lemons, ripe orchard fruits, dried honey. Very rich and opulent on the palate showing of ripe summer orchard stone fruits, pears, tangerine oil, decent acidity and a super long and fruity finish. This is drinking incredibly fresh, and although quite ripe and flashy, one can't deny the vinousity, density of the fruit on the palate. (2168 views)

Palate is yellow mature peaches, funeral flowers, a hint of ginger, honeysuckle, lemongrass, a HINT of "lemon herb foccacia" almost reductive style breadiness (which I don't usually get with purely oxidative style Champagnes). Just hitting on all cylinders. Probably one of the best bottles of bubbly I've had in a while, although the 08 Billecart on the table challenged this wine and gave more of a youthful presentation with the oysters on the half vs. this 02 Dom.  Tasted by dhwesley on 12/30/2023 & rated 92 points: Quite youthful right out of the bottle, but what struck me was the immediate openness of the nose - a fragrant plume filled the room as soon as the bottle opened. Fresh despite the age with lemon rind, apple, vanilla, brioche and moving on to a long finish with almond and sherry showing the age. Over time it mellowed and improved. This is drinking excellently now but there's no need to rush to open any bottles you have in the cellar. (2110 views)

혹시 이 샴페인을 가지고 계신 분이 있다면 지금부터 시음적기니 마셔도 되겠다.
얼마전에 마셨던 2006 빈티지와 겨우 4년차이인데 생각보다 뉘앙스 자체가 달라서 당황.

노즈에서는 따르자마자 꿀 향기가 느껴진다.
약간 과숙한 사과향도 이내 나기 시작하는데 이게 브리오슈향과 같이 나는게 괜찮다.
꼬수운 향도 나는데 이걸 숙성향으로 표기하면 딱 맞을 것 같다.

입에서는 자잘한 기포가 아직도 꽤나 잘 살아있어서 식감도 꽤 즐겁다.
숙성이 잘 되었는지 산도보다는 고소한 너티함이 더 느껴진다.
재미있는 건 온도를 차게 유지하면서 마시는 게 개인적으로는 더 좋았다. (2403 views)

France - When it comes to wine, France stands alone. No other country can beat it in terms of consistent quality and diversity. And while many of its Region, Bordeaux, Burgundy and Champagne most obviously, produce wine as rare, as sought-after and nearly as expensive as gold, there are just as many obscurities and values to be had from little known appellations throughout the country. To learn everything there is to know about French wine would take a lifetime. To understand and appreciate French wine, one only has to begin tasting them. Sub-Region:

Champagne - The French region of Champagne (including the cities of Rheims, Épernay, and Aÿ) was the first region in the world to make sparkling wine in any quantity. Today, the name of the region is synonymous with the finest of all sparkling wines, and wine-making traditions of Champagne have become role models for sparkling wine producers, worldwide. Surprisingly, the region of Champagne is now responsible for only one bottle in 12 of all sparkling wine produced. Styles of champagne range in sweetness ranging from an extra brut or brut 0, to the basic brut to demi sec to doux; some houses produce single vintage champagnes and others produce non-vintage (or incorporate wines/grapes of multiple vintages), often to preserve a specific taste; combinations of grape varietals; and colors, including a rosé. There are several sub-appellations, including the Valley of the Marnes river running from Épernay west, Massif de Saint-Thierry north and west of Rheims, Valley of the Ardre, the Mountains of Rheims (between Rheims and Épernay), Côte des Blancs, Côte de Sézanne, and Côte des Bar in the South. Champagne wine only uses three grape varietals (cépages): Chardonnay, Pinot Noir, and Pinot Meunier.
