    Open 2 hours. In the best sense. A grape wax. Started really subtle. Grape bubbalicious. Palate doesn't come across so blisteringly acidic. I like it.

  • 2006 Johann Donabaum Grüner Veltliner

    DAY 2. backing off from pear fruit. kerosene and almost about to drop a nut. there is a sweet fruit in the nose, but not dominate. dried flowers for drinking, but by day two the palate is a bit faded.

  • 2008 Buty Sémillon/Sauvignon/Muscadelle

    Lemon cream. Some pitchy kerosene. Palate is more mineral driven. Med plus acid. Very saline nose. Clean nose. Almost some minty association on the palate. Mint oil. Finishes with long apricot.

  • 2005 Jermann W.... Dreams .........

    From 375. Volcanic ash. Pitched black grain. Kerosene. A beauty.
    DAY 2. there's that subtle seaweed note. along side a quiet soy sauce. all a part of the descending oak expression? yeah, a soft grain. a thought of a positively bright acidity, indicating 'climate.' Showing much more resolve of oak in the nose than the Ca' del Bosco 2004. So crystalline on the palate. a piercing purity.

  • 2004 Ca' del Bosco Terre di Franciacorta

    showing a shade lighter goldenrod yellow than the Jermann. Such a beautiful brittle. Quite a few more years of drinking ahead of this one. Palate unfolds into a soft floral and nutty complexity. A brown aspect to the age in a distinct honeycomb. Wait another year.
    DAY 2. Next to the Jermann, Were Dreams 2005 in 375. Makes for a confusing comparison. I'd have to say that if you had both of these bottles in 750 format, both of their respective vintages, they seem to be on a respectable 10 years from vintage date of drinking. I'd have to say that the Ca' del Bosco is richer overall in style. not as subtle as i've found the Jermann.
    DAY 3. also, as the Ridge 05 SCM chard on day 3, this settles in a bit. i'm getting the most fruit out of this wine today. a soft focus pineapple. a very harmonious nature. DRINK OR HOLD.

  • 2005 Ridge Chardonnay Home Ranch

    Caramelized sugar. Creme brule. Not as nutty as I thought last time. Richness all over the palate. A sweet liquor. Brown butter.
    DAY 2, next to Jermann Were Dreams 2004 (375ml) and Ca del Bosco 2004 Chardonnay. Such a marked difference. today rich again, does not become sherried in any sense, just rich as hell. a dark honey. a roasted graham cracker. very long finish. soft golden color. beyond the other two. palate is well balanced with some floral notes emerging. a sweet finish not shown by its drinking partners. that is what lingers on here. spicy manuka honey. such a fun flight.
    DAY 3. the last two ounces. today this has stepped back a notch in the overwhelming richness of the first two days. much more of a golden sheen in the nose. i did not see this evolution coming. today more like the crust of creme brule when it gets crispy and shiny, but before it gets brown and bumpy. this is the day that thinks this wine will emerge from richness into a glorious decent. finishes of an ashen smokiness. HOLD.
