Chablis

We left Reims around noon and drove over to Chablis. We stayed at Hostellerie des Clos which was very good and reasonably priced. Chablis is a great little charming village and if you love the wines of the region like we do, then it’s an absolute must to visit. Attached to our hotel, is the restaurant Les Clos. The dining room is plain but stylish and the service, much the like food, was very good, but not great. The wine list, however, is the best I’ve ever seen for the wines of Chablis and with very reasonable prices.
Our visit at Domaine Servin was absolutely fantastic. Not only are the wines great, but our gracious host Marc spent over two hours with us explaining in the ins and outs of their vineyard holdings, their wine making procedures, barrel sampling and opening several bottles. This is one of my favorite Domaines in Chablis and it’s great to see the people working here are as fantastic as the wines.
Our other visit in Chablis was at Domaine William Fèvre. In my opinion, Fevre is making some of the best wines in Chablis (in the top three along with Vincent Dauvissat and Francois Raveneau); especially since they backed off from new oak around the 2004 vintage. We had a personal visit with Isabelle who shows us around the property then poured us a few of their recent wines. Although we didn’t have time on this trip, our next visit to Chablis would include having lunch at La Bistro des Grands Crus, a partnership between the owner of Hostellerie des Clos and Domaine William Fevre.

Drank at Les Clos in Chablis. Opened and consumed over 2 hours. Light to medium lemon in colour. At first the nose was somewhat tight offering notes of soft lemon and a pleasant nuttiness. In the mouth it's silky and soft. Medium weight with a round, rich and palate coating mouthfeel. At this point the acidity was average at best. After about 30min in the glass this wine started to show its pedigree. Notes of light honey, hints of nutmeg, lots of seashells and minerality. Loads of acidity now and it's gaining weight and complexity as it continues to open up. Notes of cheesy funk coming through on the now pronounced nose. Flavours of soft lemon, spice, toast, and hints of honey wrapped in rich yet fresh profile. This is drinking very well now and there's most likely another 5 years of development to go. Outstanding. 93+

Drank at Les Clos in Chablis. From 375ml. Pruney, alcoholic and tasted 5 years over the hill. I hope this was just a poorly stored bottle.

2006 Domaine Michel Mallard & Fils Aloxe-Corton 87 Points

Drank at Les Clos in Chablis. From 375ml. Medium red in colour with slight hints of an orange hue near the rim. Developing nose of red cherries, dark strawberries and hints of baking spice. Flavours of darker red pinot fruit and some leather notes as well. Light in body with good acidity and light but gritty tannins. The finish is slightly lean and is short to medium in length. Drinking well from this half bottle but there's no rush. Good.
