A classic eve for two gentlemen

Introduction

We simply enjoyed, great wines, spectacular foods and a plethora of rewarding topics.

Flight 1 - Dinner (3 Notes)

The port was excellent to the fois gras and the cheese plate.
The others were excellent to the rest.
Tremendous marriages this evening :-)

  • 2007 Domaine William Fèvre Chablis Grand Cru Bougros Côte Bouguerots 90 Points

    France, Burgundy, Chablis, Chablis Grand Cru

    A step back compared to 3 yrs ago. If this only could fatten up and mellow on the mid-palate, it would be an awesome wine.

    Opening a Chablis always stresses me. It's the ever near prescence of the Prem-Ox Monster that is the culprit. So far, I've never suffered a single btl, but I've opened several friends' btls that were stricken. Luckily: this expensive buggar was also pristine.

    Robe: light yellow.
    Nose: small nose of tight fruit and minerali
    Palette: small, actually somewhat 'snippy' impression. Thin, overly acidic and unbalanced for the first ~half hour. After some air time, the sylphlike ballerina art start showing off. Boiled strawberries in a very fine (yet overly tight) finish. A faaar cry from mature, but quite attractive, nevertheless. However, THiS kind of wine experience, I can go and buy any day of the week for half price. So, I'll be darned to not keep this for the longer haul, as in after 2025. Come brinstone and Hell or Prem-Ox, I really want to enjoy this wine's mellowed and matured core. As long as the wine is not tainted, this will surely be one of the great experiences...

  • 2001 Château La Clusière 96 Points

    France, Bordeaux, Libournais, St. Émilion Grand Cru

    Dumbstruck! From a wine that already at the POP was amazingly attractive and grew fantastically before even going to the restaurant! Quite amazing wine, but annoyingly expensive.

    Very dark red.
    Aromas: captivating Bdx-earth near stables and sulphur in a very typical Left Bank (!) profile. Dark fruit in early maturity with a fine set of M++ tannins and M++ acids. Among the mature aromas are L'Oreal mascara, water colour block, an early whiff of sumi-ink, raw meat and (iron/rust) blood as well as smoked notes made in Heaven. Insanely complex!
    Palate: aromas from the nose are mirrored well. Incredibly intense, medium bodied, elegant, enticing, shape-shifter/changeling wine that made at least two of the plates sing and dance. M++ tannins and acids. Elegant like a forceful karate kata, complex, regal and loooong!
    Tonight's best wine, for sure! Amazing to find a Bdx wine like this from 2001... The best one in our book so far. And by far!

  • 1992 Dow Porto Vintage Quinta do Bomfim 92 Points

    Portugal, Douro, Porto

    Too young and too fruity. Had I known, I'd have kept our last btl for another 10 yrs. The CT drinking window is dead wrong...

    First btl in 2007-ish made me feel ripped off. It has constantly moved up the scales on drinkability and satisfaction, so that it is today a great VP with a whole lot of both fruit to melt into complexities and future ahead. Sweetness in check, but (as stated) fruit still too fruity.

    Brownish red with a distinctly mature brim.
    Nose: PHAT, wide and fiery typical port as the foundation. On top of that are aromas of pens, well-used leather purse, cherry compote, newly sawed wood (a tad), Chinese cooking, new wax candles and raw eggs.
    Rich, exciting and classic! It (finally!!!) has developed wings!

    Really wish I had some more of this for a further 10 years and more down the road.

    Tannins still pack a punch and has bite. Sweetness just above Amarone, so did great with fois gras and cheese, but over on the sweet side for the other plates. Still mainly fruit driven, which you can get in a ruby port, and is just what to avoid with VP. The aromas of the nose are also found in the taste, but severely over shadowed by the rich, jammy fruity expression of this wine's current state of affairs. Maturity is on it's way, but still several years from that beautiful and much appreciated tanned leather feeling...
    The length is very promising.
