Amuse bouche: Smörstekt toast fylld med brieost, Philadelphia färskost och tryffelolja och färskt hummerkött
Förrätt: Rödlökspannacotta och Provencalska pilgrimsmusslor
Huvudrätt: Helstekt reninnerfilé med parmesanpotatispuré och amaronesås
Efterrätt: Svensk tiramisu på pepparkakor och punsch
Pre-dinner tillsammans med amuse bouche bland annat.
NV Mansard Baillet Champagne Brut Rosé 89 Points

Still youthful nose showing raspberries, minerals and a hint of vanilla. Youthfully austere palate with a nice structure and a good cherry finish with nice length. More of a rosé to match with food, still a decent showing with a nice structure!

NV Deutz Champagne Brut Classic 89 Points

(Disgorged in January 2016) Incipient maturity on the nose showing hazelnuts, apple fruit and citrus. Still very youthful of course with a fresh acidity on the palate with a nice and long lasting bittersweet finish. It's been a while since last I tasted the NV from Deutz. This cuvée was really good with half a year of extra time after disgorgement and would probably evolve very nicely with another extra five years or so.

2008 Taittinger Champagne Brut Millésimé 90 Points
France, Champagne
Yellow colour with a maturing nose showing hazelnuts, minerals and citrus to dominate in a fresh youthful way. Palate is very fruitful and with a crisp and bittersweet grapefruit finish. This has evolved very nicely over the last six months and feels like it will continue to improve over the next decade. Best 2018-2033.

1996 Bruno Paillard Champagne Assemblage Brut 92 Points

(Disgorged in October 2006) Yellow colour with a maturing nose showing raisins, chocolate and apricot. Palate is mature with a smooth acidity combined with a fresh citrus fruitiness and a very nice long finish. Perhaps a bit weak on the mid palate, but with a freshness over the mature nose. This was in a very sweet spot, at least with my taste for mature champagne. Best 2011-2021.

2005 Guy Charlemagne Champagne Grand Cru Mesnillésime Vieilles Vignes Blanc de Blancs 89 Points
France, Champagne, Champagne Grand Cru
(Probably disgorged in fall of 2015) Light yellow colour with a youthful nose showing hazelnuts, lemons and cream. And with some time in the glass it also shows applesauce. Palate is very youthful with lots of acidity and a long fresh finish. This was better than anticipated, with a very good glass development. Best 2015-2020.
