Powerful apple and baked apple aromas and flavors with floral hints and toasted baguette. Very powerful throughout, while already accessible, with a very long, engaging finish. So tasty now.
Served alongside the 2001. Dense and rich start with so much apple and pear along with floral hints. Nose didn't start out as classically Chablis, but more mineral and saline notes came through on the palate with its very long, texturally energetic finish. Very impressive weight.
Served alongside the glorious 2005. Open 45 minutes before serving and decanted because of some odd aromas. This never fully came around, with my thinking it stuck in a state of reduction and David thinking it slightly oxidized! Still, tasty and enjoyable.
