Guys Night Out with Wagyu Tenderloin and Crepe Cake

Introduction

Wow, the food that Jason prepared was out of this world! Wagyu tenderloin with mushrooms was awesome, and was bested by a crepe cake that he ordered from New York, which was one of my top 5 desserts of all time. The wines were also good.

  • 1989 Château Cos d'Estournel 94 Points

    France, Bordeaux, Médoc, St. Estèphe

    About 1 1/2 hour decant. This wine definitely has secondary characteristics. The nose has funk, tar, earth and graphite. The palate is slightly hollow, and there is still some tannins present. Frankly, it drank younger than I was expecting. Hold last bottle for 3+ years and still decant 1 hour(?). I find it interesting that the cellartracker window shows this at expired. That is obviously not the case.

  • 1990 Bodegas Vega-Sicilia Ribera del Duero Único 93 Points

    Decanted about 2 hours. I liked this best when it as first poured into my glass. It was seemless, completely integrated and heavenly. Someone else pointed out very slight dill, which I then detected, and the dill grew with time. I think I'm the most American-oak sensitive person that I know, and everyone else at the table was ga-ga over this wine. I was too, until it started tasting like dill.

    Decanted a couple hours. I found this to be extremely expressive. There is red fruit, plum, tobacco, earth and it is clearly a well-aged Bordeaux. I felt that it was shutting down a bit as I finished it.

  • 2001 Château de Beaucastel Châteauneuf-du-Pape 93 Points

    France, Rhône, Southern Rhône, Châteauneuf-du-Pape

    Only slow O'd a couple hours. Completely consistent with my last 2 notes, and probably brought by the same person as well. This needs more time or a long decant. The 2001 Beaucastel is very youthful still. It is clearly a CDP of great pedigree.

    This seemed to be a classic Australian wine that is not hot at all. There is a slight liqueur quality to it in it's creamyness and fruityness. There is red fruit, black pepper and spice.

  • 2012 Caymus Cabernet Sauvignon Special Selection

    This was decanted at least a couple hours. I was kind of bothered by its flavor profile. There is sugary chocolate which seems like it shouldn't exist in a wine. Unscored.

    What a great Sauternes to finish a tasting with. Classic Climens style, so elegant and nuanced. Great balance of sweetness and acid.
