Initial odd barnyard funk on the nose, and quickly becomes a sense of clay soils. Quite a bit of tannins, some acids, and the flavour profile is interesting, with twigs, grass, blackberry, and some hay. The finish is full of twigs, and I guess it’s due to the heavy phenolic extraction during fermentation
Chocolatey aromas., and a little minty. Tannins are pretty hard still despite the apparent efforts to soften, and quite a lot of blackberry fruits, over the spicy peppers and leafy herbs and twigs. Nice one!
