Have spent a bit more time with this producer of late since we stayed with the Moueix (son and wife) when we were in Bordeaux. Very impressive wine and winery. This is on the gravel beds rather than the clay that Petrus has, but it works very well for these wines.
Farro Salad, Butternut Squash, Pistachio & Parmigiano
Tuscan Fried Chicken, Hot Chile, Rosemary & Fennel Pollen
Tagliatelle Bolognese
Ribeye, 45 Day Dry Aged with Celery Root & Spigariello
Chocolate Budino, Carmelized Rice Krispies & Olive Oil Gelato
I always tend to prefer the wines with a bit more age. Thought that they showed well. The youngsters are all very promising!
2002 Ruinart Champagne Dom Ruinart Blanc de Blancs
France, Champagne
Nice and bright and light and lots of bubbles. The 2002s are aging very slowly but that's not a bad thing. The best word for this is fresh.
