Introduction

The conceit here is that the owner is obsessed with Cevennes onions, and all of the sauces are made from vegetable and botanical reductions - “no roux here”. A bit nerdy perhaps, but I’m a bit nerdy and it’s executed with great skill and verve.

We had the tasting menu and were relieved from the tyranny of choice.

We drank by the glass. The bottles on the list were spendy, but not, I suspect, by Singapore standards. A lot of Burgundy and Bordeaux.

Flight 1 (6 Notes)

  • NV Krug Champagne Brut Grande Cuvée Edition 170ème

    France, Champagne

    First time trying this. Offered as a welcome drink and welcome it was indeed. Very little of that powdered parmesan note that sometimes comes with krug, linear and very vinous. Cracking start to precedings. When tasted alongside the Roederer 243 which came after - showed itself as vastly the classier wine, but also its rough edges came out.

  • NV Louis Roederer Champagne Collection 243

    By the glass. Lovely effervescence, all too easy to drink. A certain florality which I’ve never got before - the humidity, the contrast with the food? Who knows. Did not embarrass itself by any means, but with the Krug only being 2x by the glass - I know where the smart money is going.

  • 2019 Remoissenet Père et Fils Chablis 1er Cru Fourchaume

    France, Burgundy, Chablis, Chablis 1er Cru

    More generous than I was expecting, a fellow diner said “smells sweet” and “like Riesling” and while I didn’t agree, I got it. Nice stuff and did the job asked of it flawlessly and without complaint.

  • 2019 Château du Moulin-a-Vent Moulin-à-Vent

    France, Burgundy, Beaujolais, Moulin-à-Vent

    Btg. Some spritz there, decent stuff but this was the red I was most excited about, and the one I was happiest to leave in the glass. Interestingly one of my fellow diners loved it and was happy to swap the remains of my glass for her remains of the ponsot.

  • 2018 Laurent Ponsot Bourgogne Cuvée des Peupliers

    France, Burgundy, Bourgogne

    Btg. If there were a competition to find the highest ratio between the quality of the drink and the quality of the label, this would win it. A hint of black fruits on the nose, a lovely nearly rich mouthfeel and a just sour finish. Carries its 14% abv well and not a hint of jamminess. Would love to try in a more contemplative environment.

  • 2019 Moulin de Duhart

    France, Bordeaux, Médoc, Pauillac

    Btg. Well. Not the red I was expecting to get excited about, but jolly lovely stuff. Well balanced, good acidity, a bit plush perhaps but enjoyable to drink. I’m not sure how well it would show in the cold light of a gloomy London dinner time, but I suspect it might be surprisingly good.

Closing

Much like our beloved Trompette, it very comfortably merits its Michelin star. The kitchen staff are clearly very skilful, and the front of house is very well run indeed. The small dining room is well spaced and the whole vibe was just a little bit otherworldly, although I’m sure jetlag added to the effect.
