Introduction
The Sommelier Guild of Atlanta's Holiday Dinner was held at Le Bilboquet in Buckhead. Wonderful meal with a large number of wines (many of which were excellent!). My favorite course was the Cajun Chicken and my WOTN was the 2019 Charles Heidsieck Coteaux Champenois Ambonnay Rouge that I brought (Note this is a wine that I discovered at a Guild dinner earlier this year!)

2021 Aperture Sauvignon Blanc Soil Specific 91 Points

Tasted at Somm Guild of ATL Holiday dinner @ Le Bilboquet. This was similar to a classic right bank Bordeaux white blend I had recently. The wine was tangy and acidic. The most tannic of the pinots that night Tasted alongside the 2018 Foxen Pinot Noir Block 8 Bien Nacido Vineyard and the 2019 Charles Heidsieck Coteaux Champenois Ambonnay. Tasted at Somm Guild of ATL Holiday dinner @ Le Bilboquet. PNP and drank over about 45 minutes. Nose of anise. On the palate just so lovely and balanced. Lots of evolution in the glass. This ran circles around the two other pinots: 2018 Foxen Pinot Noir Block 8 Bien Nacido Vineyard and 2016 Ernest Vineyards Pinot Noir The Settler. Clear WOTN for me.
