Fluorescent yellow color. Bright nose of honeyed tropical fruit. Candied pear and pineapple with a strong chalky minerality. Could definitely use more acidity to lighten up the mid palate. Heavy with a rather flat nutty orange finish.

Pale yellow color. Caramelized apple nose. Tastes of melon, pear and apple. Well balanced with refreshing acidity. Medium bodied. Nicely integrated French oak. Soft, elegant finish. Seems to be fading away as it sits in the glass. After an hour it began to completely fall apart. On the downward hill slide? Drink them if you've got them.

Roasted Game Hen with Sage-Infused Rice
Golden yellow color. Caramelized tropical fruit nose. Tastes of apple, pineapple and creamed corn. Quite young tasting. Was told this was stored at 45 degrees F which explains its youth. Well balanced. Long rich finish with nice depth and elegance.

How nice is it to have had this wine so frequently I can trend its development over the past few years. Pale yellow in color. Fresh tropical fruit nose. Tastes of apple, melon and pineapple. Noticeable French oak that needs time to better integrate. Medium bodied and very well balanced. Complex mid palate. Long elegant finish. Quite young and seems to be going through an awkward phase where is it not as expressive as on release. Showing much better than the last bottle but still not at the heights of the first two bottles. Always a pleasure to drink.

Yellow color. Aromas of milk and apple on the nose. Quite light and restrained. Good balance. Soft finish.

Golden yellow color. Apple and melon on the palate. Rich mid palate fruit profile. Very good balance with excellent freshness and acidity. Nicely integrated oak. Medium bodied. Rich finish with nice depth and complexity.

Poached Pear with Stilton Cheese
One of the oldest Quarts de Chaume I've had the opportunity to taste. Golden yellow color. Strange nose. Quite metallic and bitter. Showing TCA after 5-10 minutes in the glass.

Yellow color. Citrus nose. Tastes of lemon, lime, orange and tangerine. Citrus finish with a slight sourness. From the last few bottles, it seems to have shutdown and is going through a very awkward period. Hold.

Golden yellow hue. Fresh floral nose of tropical fruit with aromas of freshly baked bread. Tastes of honeydew melon, apple and caramel. Nice minerality. Perfect balance. A very delicate wine with an expansive finish that is extremely complex and elegant. What a beautiful wine. My personal WOTN and a candidate for the best Champagne I've tasted this year.
