Plum Soup

  • 2000 Dom Pérignon Champagne 91 Points

    France, Champagne

    Light yellow. Buttery note on the finish. Nose of citrus, almond, pear, and honey. Light toasty note. Medium body with very soft bubbles. Moderate acidity. Medium length finish. As the Champagne warmed up and breathed in the glass it gained a smoky flinty note and got more complex.

Grapefruit Terrine

    Floral tropical fruit. Stone fruits. Medium acidity. Nicely sweet with a very long finish. Paired very well with grapefruit terrine. Needs more acidity to be great.

    The cork extracted cleanly but looked slightly decomposed. Good clarity. Medium red with good clarity. Showed significant oxidation on the nose but the color and palate were ok. A bit vegetal also some nice fruit and leather on the nose and palate.. Moderate tannins with nice acidity and moderately complex finish.

Grilled Steak

    Brick red. Nose of soft red fruit. Soft tannin with nice acid. Fruit is a bit tired. Medium length finish. Entirely drinkable with some nice complexity. Somewhat surprisingly this gained weight and complexity in the glass with some added sweetness. Evolved nicely. An hour in a decanter won't hurt this.

Chocolate Torte

    Portugal, Douro, Porto

    Ruby red. Nice nose of raspberry, plum, and cherry. Medium weight. Moderate sweetness. Leather and chocolate. Soft well integrated tannin. 4 days later it is still delicious with perfectly integrated soft tannin and good acidity. Very smooth with nice complexity and a long subtle finsih.
