We drank in unique glasses ( the somm recommended) and it continued to evolve. As well our somm told us it would warm up 1C every hour. The wine changed! It paired wonderfully! |

A bit below room temp but as it got oxygenated it unwound from its tannins. Paired acceptable with lamb and mushrooms as well as a variety of cheeses. Towards the end of a 2 +hour meal it’s age began to be noticed. It’s not spoiled nor past it’s peak but still a hint of its sge becsje apparent. I’d think it’s great to drink now and for another 5+ years IF cellared properly |
