Farewell Runny....at least for now! (Chez Patrick Restaurant, 2/F, Garden East, 222 Queen's Road East, Wan Chai, Hong Kong): Left to settle vertically several days beforehand then decanted roughly 5 hours before serving. Slightly dusky, semi-opaque deep ruby gemstone red colour with no bricking whatsoever. Nose is OFMG....I just wet my pants....sorry, teacher but I couldn't help myself......it's taken me to somewhere very Freudan and basic....incredible precision of fresh, light, linear, newly-sharpened pencil, high toned......still so fresh and with no hint of tertiary notes.....it has a resonance and reverberance inside the head even when you have done no more than sniffed the nose....that is my definition of profundity. Palate is all the same but with deeper, liquorice and opium paste intensity that is just totally mesmerising, mesmerising.....did I mention mesmerising? It has a lighter Opium reverie on the finish than some previous bottles I have drank but it is compensates by a blow-away chiffonesque and totally profound endless resonance in the central cortex of the brain. It has a lightness and finesse that is just so silence-creating....oh, oh, oh.....it's the definition of "profound". I still find it hard to believe that our very diverse and normally deliberately contentious group of 10 wine buddies all just totally rolled over and surrendered and said " 100 points, no debate" on this wine tonight. There was not a single dissent....which is even weirder when some of the group have insisted on never scoring any wine above 95 points or so on principle.

Served in white wine glass. Silvery gold colour. Moderate mousse in the ‘house’ Pol Roger style but super-persistent multiple tiny beads of bubbles. Nose is one the slightly fermented straw barn end of the spectrum but with a lot of fresh ozone and crushed oyster shell behind it. Light, lifted notes of fresh-squeezed lemon too. Palate is crisp but rounded, with a doughy, wheaty background that adds weight and masculinity. Slight drying bitterness but refreshingly so…although some I’m sure might find this a discordant note as it increases with time in the glass. That said, it becomes what is usually described as ‘chalkiness’ over more time. There is some weight and resonance on the finale that you wouldn’t normally associate with an entry-level NV cuvee. Great as an aperitif but even better as an accompaniment to a fresh, light seafood starter dish than the traditional Sauvignon Blanc-type wine. As an aside, if you smoke cigars, this a perfect accompaniment. Ridiculously good QPR as mentioned in my previous notes. 91 easy.

Dinner For Returning Friends (Our House, Hong Kong): Decanted for 2+ hours then drank slowly over the next four. The 10th time I have drank this wine. Dark, semi-opaque purple/ruby colour...still looks very young. Nose of Thai chicken green curry - galangal, fresh ginger, chicken broth, small Thai green aubergines - plus some lovely dark fresh cherry fruit. Palate is light, bright, fresh but starting to show a touch of cherry liqueur. Very high-toned piano notes ....but followed by massive heady cherry-toned 'lightness but weight'. This is a wine that polarises opinions but ....not having drank it for a couple of years... I'm now more convinced than ever that it needs another 10+ years to show its true colours. The last glass, 7 hours from opening, was by far the best. 91+ with lots of headroom.

Degustation Dinner & Wine at Amador, Vienna (Amadors Wirtshaus, Grinzinger Str. 86, 1190 Wien, Austria): Drank a glass as an aperitif from the wine list at Amador, Vienna. Light gold. Small bubbles. Nose is sharp and razor-precise. Palate is similar Pinot driven razor precision on entry then a BLAM of deeper straw-driven Chardonnay. Big finish! Kept putting on weight and depth until 3 hours in the glass when the final drops soured. 93 easy.

Decanted for an hour. Colour is a purple-tinged, fully opaque crimson just lightening slightly at the meniscus. Nose is deep, slightly funky, quite reticent but with great depth of black pastilles fruit and supple rounded red plum and supple new leather. Palate is really elegant, deeply powerful and plush. So rounded. Major reverberance and satisfyingly resonant. I am surprised how approachable this is already, especially the roundedness of the tannins, which must be down to the quality of the vintage as Gruaud is usually rather rustic when young. Bellyfillingly rich and punching well above its usual weight. It was an easy choice in the restaurant at one-third the price of its bigger brother, which wouldn't be worth opening yet.

Final bottle of a case released from the Chateau library stock in 2015 (all very coolly wrapped in Chateau-stamped tissue paper). Double-decanted at home and taken to the restaurant in the bottle that had been cleaned for substantial sediment. Drank contemplatively between two of us over two hours. The colour is just getting an autumnal plum red hue. Nose is KAPOW!...so mutlidimensional and immediately accessible, slightly acidic cow poo, slightly elevated nail varnish tones, mint and eucalyptus but much more earthy and toned down compared to a similar vintage of Grange (meaning not quite in that league).Palate is light but profound...several fugues on plum fruit...beautiful follow-on acidity....really fresh...so multi-layered...so complete. Massively reverberant and long on the finish. I had persuaded myself that this needed drinking soon...not sure sure based on this bottle but no regrets. Definite WOTN despite paired with a gorgeous Dunn Howell Mountain 1989 and an equally beautiful Ch Pichon Lalande Comtesse 1979. All said, I would drink this now if you still have some.

Shiny light yellow gold colour. Nose is quite reticent white fruit, Comte cheese, pomelo acidity. Palate is a real delight - a limestone dryness in the background forms the counterpoint to a gorgeous fresh, crisp, clean and very precise minerality that is totally more-ish. It displays an impressive balance and poise. Green crisp fruit acidity and then elements of Elderflower in the background as well as Pomelo. Lightly but persistently resonant and reverberant on the finish. The is a very sophisticated and assured wine. More time in the glass started to add a depth that predicts an even more sophisticated future.... if you can prevent yourself the sheer pleasure of how good it is today. Totally impressed and superb value.

(From 375 ml). Deep glden bronzed copper colour. Nose is ten different interpretations of banana - especially the fresh over ripe kind and the baked kind - with subtle hints of getaway car smoking tyres.....you just can't stop sniffing this. Palate is a heavy initial mouthfeel of baklava pastry but it suddenly unfolds into 10+ different layers, each with its own unique character.....so hard to pin down because so much is happening. So rounded and complete....there is an incredible "Alice down the Rabbit Hole" sensation of burnished honey that is almost impossible to put into words. It finishes with a gentle but extremely powerful resonance in the mouth and in the head on the finish. This wine has an incredible copper-ish element that is like liquid gold and liquid honey too. Sensational....a truly iconic wine you feel priviliged to have drank.

'Best of Australia' Dinner (Wooloomooloo Prime, 100 Nathan Road Level 21 The ONE, Tsim Sha Tsui, Hong Kong): Ah, a wine that finally starts to demonstrate the long-anticipated potential of the 1998 vintage in Australia. Benefitted from a good long decant, which this vintage absolutely needs. Light on the meniscus but otherwise semi-translucent. Nose is really gorgeous black bramble fruit, great depth of fruit and nice high piano notes of acidity. Palate is gorgeously rich, ripened, and belly-filling fruit that then immediately transfers to the central cortex in an avalanche of gorgeousnsss on the finish. I last drank this in 2015, when the palate was a lot more adolescent. This has now blossomed and harmonised beautifully. Has loads of years to remain on this plateau and I have extended the CT recommended drinking window accordingly to 2027. My WOTN despite a lovely Grange 1991 in the line-up. I was in reveries and hence a rare 96 score for me. Thanks, Daniel!

Dinner with friends. (Our House, Hong Kong): Decanted for 3 hours. Black/red almost totally opaque colour. Nose is rich, ripe black currant and beautiful damp bracken woodlands. with sun-warmed cedar roof shingles. Palate is rich, belly-filling deep black and red currant fruit. Beautiful black dense ripe berry fruit. Really resonant and reverberant even in the mouth before the swallow. Absolutely gorgeous and so open. Very big inside the head on the finish. Almost silence-creating. This is so consistently good every time I have drank it over the past 20 years. It just pipped the 1989 Ch. Montrose drank alongside it because the Lynch Bages has this total dark-eyed seductiveness to it at this stage in their development.

Sundown in Hong Kong (Frind's House): Translucent black-red. Nose is very deep black coal, very small-berried black-fruited, tight-wound blueberry, dried star anise, nail polish remover, kumquat oil, metal shavings and grahite. Palate is immediately very harmonious, coal shards, anthracite, lots of black small-berried fruit. More dilute than I’d expected from the nose - the tannins are pretty much fully melted - but it actually fleshed out with time in the glass. All it lacked was significant length.I wanted to like this more but the palate or length didn't quite match the promise of the nose. It was a very tired label so maybe not a perfect bottle. Whatever, it was one hell of a bottle of wine.

White Truffle Dinner (Otto e Mezzo, Alexandra House, Central, Hong Kong): From magnum. Semi-transparent brightly jeweled ruby colour. Nose is rich white chocolate, slightly sweaty leather, a stinky element that surprisingly didn't blow off, mandarin skins, some tar and subtle hints of rose-water......quite complex but somewhat reticent although it did unfold more with extended time in the glass. Palate is unexpectedly lifted fresh acidity, bright red currant fruits and slightly tart strawberries but overall a little thin and in a dumb phase. However, it has a lovely perfumed finish that leaves rose petals on your tongue. Some resonance and quite long. The tannins came to the front and over-dominated with extended time in the glass. Still a work in progress, at least in magnum format......I would revisit in 5 years.

'No Masks' Hong Kong Dinner (Table, 8th Floor, The Pemberton, Sheung Wan, Hong Kong): Decanted for several hours before serving. Still purple-red young colour. Nose is gosh... deep, mesmerising 'Alice down the rabbit hole' black fruit. Palate is absolutely drop-dead gorgeous pure linearity but still really tightly coiled. All dark 'black slab' intensely concentrated but pure black and red pastilled fruit at the moment and a graphite-stiff but not overly tannic backbone. Mesmeric length and resonance but in a very muted tone. This is really great winemaking, especially for a 'second' wine. It really needs another 5-10 years to unfurl but I happen to love this very linear and pure style just the way it is. Oh, wow! 95+

2010 base, disgorged in 2017. Light gold colour with a good mousse even when served in a wine glass. Nose is lovely warm straw and a hint of stables. Palate is rounded, warm hay and sweet juicy red apples. Saliva-inducing Epsom Salts salinity and minerality. Good length and pleasing toastiness. Even better the next day. Great. Ridiculous value.

Dinner with Runny (Crown Wine Cellars, 18 Deep Water Bay Drive, Shouson Hill, Hong Kong): A glass gifted by the ever-generous Steven Wickens and contemplated over 3 hours. Deep semi-translucent purple-red. Nose is pure but very closed and young.....but absolutely stunning in terms of potential. Palate is very tannic, structured, dry.....and lovely. Winfanticide.....come back in 10 years' time. 93+ for now but could go to 97, easily.

Decanted off the restaurant list for an half an hour or so and drank over the red meat and noodle back end of a gorgeous Chinese meal...... I wish the decant had been longer but the wine still showed all the elegance and good winemaking grace that epitomises Ridge. Wonderfully perfumed and expressive nose and a gorgeous satisfying body. This is the kind of wine you don't mind paying 3x for in a top restaurant compared to retail....... it still punches at that higher price point....in this case nothing else on the wine list would have come near even at twice the price (doncha love Zinfandel). A shame it wasn't the 2005 but it will get there. Give it another 3 years or so to really come into its full glory. I love Ridge Lytton Springs almost unconditionally....the California equivalent of Ch. Musar (e.g. off the well-trodden path but world class and totally with personality).

Mothers' Day Lunch (Crown Wine Cellars, 18 Deep Water Bay Drive, Shouson Hill, Hong Kong): Drank from white wine glasses. Very good mousse. Nose of ozone, fresh hay, warm sand. Palate is extremely minerally and Epsom Salts. Really young. Extremely fresh but added more body with time in the glass as it got to cool room temperature....like fresh hazelnuts. Gorgeous but this was a very young bottle and I had to check that I hadn't pulled a 2002 Oenoteque by accident because it had that kind of later disgorgement freshness and limestone back-end dryness. I need to keep some back for 10 years. Drinking a final glass 5 hours later, my notes haven't changed.

From a 350cl and the first time to revisit this in 5 years. Our host fell asleep so I got to drink two-thirds contemplatively. Deep orange gold colour. Nose is a blast of almond, apricot stones, confit apricot, warm rubber. Palate is thick, unctuous mouthfeel somewhat sugary marmalade but great lightening acidity and then a rolling sensation of unfolding summer flowers, honeysuckle, Deep burnt orange marmalade. Lovely acidic balance. Gosh, this gets really reverberant inside the head on the finish and is really long. Very contemplative. Lots of that signature Yquem botrytis. This wine departs from the mouth to the central vortex very quickly...like in 45 seconds. Absolutely fabulous and worth the high price of entry for a once-in-a-lifetime bucket list experience if you love wine and don't have wealthy friends. 96+

Mothers' Day Dinner (The Consevatory, Crown Wine Cellars, 18 Deep Water Bay Drive, Shouson Hill, Hong Kong): Served in white wine glasses at my request. Lovely gold colour. Very energetic and persistent tiny bubbles. Strong legs for a champagne. Lovely fresh hay, toasted marshmallow, fresh-baked croissant on the nose. Palate is massively fresh and invigorating ozone and crushed oyster shells, really scintillating. Feels like it is a much more recent vintage but this is from a case bought on release. A nice light buzzy resonance. Lovely now if you like your champagne young but one day it will match the 1996 for sure. Wow! Fantastic as an aperitif and also with lightly braised Hokkaido scallops with chorizo. It is a good food champagne. Probably the best bottle of this vintage of maybe a couple of dozen I have drank over the years. Had it beeen drank blind, I would have assumed 2002 Oenoteque rather than a regular bottle.....so fresh.

Drank mid-way through a friend's chaotic but wonderful birthday dinner at the Chef's Table, Ritz-Carlton in Hong Kong. Definitely not an evening for contemplation or taking notes.. chaotically, the Sommelier quietly told me he thought it was faulted.....I politely suggested that told he doesn't know Mount Mary too well and just let the funk blow off...it ended up being most people's WOTN (vs a Gaja Spresse 2008). The sommelier nearly agreed! He preferred the 2008 Gaja and I can't challenge him on that except for 'chacun a son gout'.

Cantonese 'Comfort Food' Home-Cooked Dinner (Our House, Hong Kong): Decanted/double decanted/decanted again over 4+ hours (I sometimes get a bit nerdy about trying to optimise decanting...but this worked well). Deep, almost totally opaque black/red with a slightly lighter meniscus. Nose is lovely well-defined wild blackberries, predominant medium-worn saddle leather, damp woodland earth, new shoe leather....very alluring and sniffable. Palate is a good balance of sharp fresh acidity and firm tannin, briarberry fruits with the tannic pips. The fruit is definitely lean compared to a riper year like 1990 or maybe 2000....it lacks that bellyfilling quality and probably always will but the fruit/tannin balance makes up for it and there is still a lot of both to play with as the wine matures further over the next 5-7 years. The last drop, 3 hours after the first pour, showed the most fruit. Good rising length and especially resonance with extended time in the glass. This will probably always be a wine for people who prefer a leaner style of classic claret but it is a gorgeous wine and a great example of an overlooked vintage in Bordeaux which offers great value and is only just starting to show its best attributes, in my view. Pleased that I still have 10 bottles of a case bought on release. 91+

Sunday Lunch at Friends (Their House, Pok Fu Lam, Hong Kong): My first from a case bought En Primeur after tasting 70 barrel sample wines and it coming 2nd (to Ch. Pavie). Double-decanted for 2 hours then fully decanted for another hour. Deep plush and opaque ruby colour just lightening to transparency at the edges. Nose is ....oh, gosh....earth and very linear graphite, white chocolate, cardamon dust and other Indian spices.....very alluring and open. The spices became pleasingly more prevalent with entended time in the glass in that classic Cos D'Estournel signature. Palate is velvet-smooth, with super acidic freshness on entry then a wave of deep, complex and really resonant and reverberant fruit - blackcurrant, blackberry and redcurrant yet all so integrated with the oak. The spices from the nose emerged more on the palate with time in the glass to add to the complexity. Very more-ish and contemplative. Huge length. A fantastic lunch wine over rare-grilled steak and salad. A more complete wine than the Pontet Canet 2000 we drank alongside it. This is a perfect claret in many ways.

Honeyed gold. Not much on the nose because we drank it from liqueur glasses and hadn't decanted it. Very sweet on the palate... more sweetness than botrytis. Peach stone and fresh-peeled almonds. Burnt caramel. Barley sugar. Not overly complex but easy to drink...two of us finished off a 75cl bottle over a couple of cigars each. Will treat it with more respect next time.

My first of a case bought after drinking a bottle back in 2009. Decanted briefly.......much too briefly as it turned out......then drank with a friend over 2-3 hours to accompany a serious steak dinner. This hasn't evolved much since 2009.......heavily tannic and young even with the softening effects of steak. Enjoyable but sometime in the future this will be twice the wine. For now, I would recommend a 4-hour decant at least.

Perfect fill and cork. Translucent amethyst red, lightening to semi-transparent away from the core. Nose is stunningly seductive blackcurrant, graphite and pencil lead, fresh-sharpened pencil shavings, hints of cinnamon stick, sun-warmed cedar shingles, with cigar box increasingly emerging as it warms up in the glass, very fresh and alive. Palate is high-toned, elegant, beautiful fresh acidity of young blackcurrants, iron, taut pencil lead linearity from the still-firm and machine-ground tannin backbone with cigar leaf emerging as the wine warms in the glass and which dominates the mouth on the finish. Immediately deep rumbling resonance and reverberance inside the head with a finish that goes on for ages like that gap when the opera singers complete the finale and before the audience can shake themselves from their spell to applaud. None of its young elements retreated throughout the long evening, which leads me to believe it can improve with several more years in the cellar. 94 for now.
