Ugh. Can I give this negative points? This was absolutely horrible. I don't expect greatness from a $6 bottle of cava, but something drinkable would be nice. About the only positive thing I can say about this wine is that the bubbles were active and lively. Popping the bottle released marginally inoffensive aromas. To be honest, it was pretty bland and nothing stood out. On the palate, however, this was an abomination. The best description of the taste I can come up with is a mixture of sweaty gym socks and Listerine, followed by an awful moldy lunchmeat aftertaste that lingers and lingers. Throughout the night, this wine only got worse. After a couple of hours, the smell had mutated into this vile combination of windex and bobcat piss. All was not lost however. I found a recipe to make this wretched wine somewhat palatable:

6 oz. tequila
8 oz. L'Origan cava
8 oz. apple juice

Directions:
1. Pour the tequila into 4 shot glasses.
2. Drink the tequila shots
3. Mix the cava & juice in a pint glass.
4. Pretend the mixture is a crappy hard cider while you drink it.

Medium bodied with smoky plums at the forefront. There's a definite green note, almost like bell pepper, but is pretty much overwhelmed by the fruit, which borders on jammy. Getting a bit of iron/blood/meat on the mid-palate and a little heat on the finish. Improved with time in the glass and showed much better on day 2.

If it were cab or merlot or pinot, I could make a decent guess, but I'm totally clueless when it comes to syrah. My main worry is whether the green notes will get stronger or weaker over time. If the fruit fades too much, I could see them getting overpowering.

IF you give this a LOT of air, these bottle are really shining. Upon opening, this was really disjointed and harsh. Fruit was totally muted, there was noticeable heat, and it just seemed incredibly tight. Splash decanted and poured it back into the bottle. Fruit started coming around after 6 or so hours. On day 2, however, this is a totally different wine. Much more balanced and smooth. There's no heat, fruit and oak are well-integrated, there's more complexity on the mid-palate, and the finish is back. Very elegant wine.

Maybe this needs more time in the cellar, but for me, it was a hot mess. I've enjoyed other Wellington wines, so this was a considerable disappointment. Started out with nice aromas of blackberries and white pepper. After some time, though, it developed an overwhelming raisin presence. On the palate, it was all stewed raisins and alcohol (no spice, no complexity). The sheer heat of the wine really masked any other attributes and left a noticeable burn on the finish. Very little change over the course of 4 hours. Nearly all of the fruit had dissipated on day 2 (vacuvined and left on the counter). Leaving this unscored since it could be a bad bottle, but I didn't notice any of the usual signs of flaws.

    I was a bit surprised by this bottle. I definitely enjoyed the '05 much more. I have mixed feelings about Wellington. For the most part, I think Peter's wines are decent, but I don't get all the ga-ga love he gets on Woot (then again, I think the same about Ty, but that's another story). I think he does a great job with the Victory, but those wines just seem to take so long to come around. I might start limiting my purchases to those, though.

Pop 'n pour. Wine is a dark, inky purple. Notes are very similar to my previous bottle. Aromas of dark fruit upfront, some vanilla coming through. Nice acidity to balance out the fruit. Gains a bit of complexity with time in the glass. Definitely decant if you want this to reach its potential. Opened this too soon, will hold my remaining bottles for another 3+ years.

Edit: Bumped this up a couple of points. The wine was drinking much better on nights 2-3. Flavors had integrated much more.

    12/16/2012 6:57:00 PM - Richard, I unfortunately can't compare them, since I haven't tried the '05. IIRC, Peter said that the structure and balance of both vintages was similar, but they had different flavor profiles. If that's the case, I'd probably hold 'em for at least another year, given how much improvement there was overnight.
