It would probably pair exceptionally well with many beef short rib dishes I've had. No clue how it would age due to my lack of experience and the wine's modest tannins. My guess is that this isn't Clos Rougeard in the making, and though the winemaker believes it will age for 15+ years, it won't necessarily improve by virtue of evolving. |
