Smoky sauv blanc nose with aromas papaya, lemon with hints of toasty oak. Palate was quite similar in profile to the nose with papaya, lemon, smoke and toasty oak with great acidity and a fresh and tart citrus finish. Smooth texture with fresh and lively mouthfeel. This paired fantastically with the scallop course. Excellent.

Flight 3 - Squab Breast with Foie Gras, Chestnut Polenta, Charred Cippolini, Natural Jus, and Perigord Truffles (2 notes)

Pronounced nose right off the bat here with lots of charred oak, smoke, poop, lead pencil and dark red and black fruits. Just a really lovely nose. On the palate this had classic Bordeaux structure with a good amount of dusty tannins and solid acidity. Deep red fruit flavours with a fairly length smoky finish. A classy wine that’s approachable, but should continue to improve and develop for many years. Excellent. 91+

Tasted blind – Nose came across as perhaps from a warmer year with mature red and black cherries, cedar and a slight green/leafy note. Great structure on the palate with firm tannins, lots of acidity and a warm red fruit finish. Despite the touch of warmer fruit, this was still fresh and quite youthful still. At first I thought this was an early to mid-80s left bank wine, but then towards the end started to think it was a mid-90s Pauillac. Drinking well now but there’s room for improvement over the next 3-5 years. Very good. 89+

This is a hammer of a wine—big, structured, tight and backward. Very tannic with excellent acidity. The tannins were somewhat bitter and astringent. The wood needs to integrate further as well. This needs a lot of time. Judgement reserved at this point but if everything comes together should be a really nice wine.

Flight 5 - Sticky Pudding with Apples, Dates, and Salted Hard Sauce (1 note)

White - Sweet/Dessert
2003 Château La Tour Blanche Sauternes France, Bordeaux, Sauternais, Sauternes
85 points
Medium golden colour. Big sweet nose, apricot, honey, sweet pineapple. Lower acid with sweet fruit on the palate. While still enjoyable, this is a rich, soft and plump wine that doesn’t have enough acidity or freshness for my tastes. Good.

Flight 6 - After dinner wines (3 notes)

White - Sparkling
1998 Billecart-Salmon Champagne Cuvée Nicolas François Billecart France, Champagne
90 points
Fairly consistent with my previous note but this bottle was fresher and had more acidity than the 9/14/2012 bottle. Still really nice and should drink well for another 5 years. Excellent.

Consistent with previous note (12/30/2010). Outstanding.
Red
1989 Château Pichon-Longueville Baron France, Bordeaux, Médoc, Pauillac

Something off with this bottle. Stewed fruits, warm palate, soft, more forward and advanced than any of my previous 6 bottles (all from the same source). Too bad as this is always a favorite of mine.
