Liquid gold! We drank it on two consecutive nights and it was great the first night and even better the second. Decanted on first night for an hour. It has perfect acidity - enough to let you know it is there but nothing offensive. Steady citrus - lemon and maybe a bit of rind as well. Buttery with a hint of oak, but not overpowering. Great feel and finish. It paired perfectly with both my wife’s fabulous roast chicken on Wednesday night as well as a wonderful pizza from San Francisco’s Delfina on Thursday. Aubert certainly isn’t inexpensive, but both meals were as better than the majority of our $100+ restaurant meals. A real winner. Glad I have five more and also just picked up my spring 2024 allocation yesterday. Their wines have really spoiled us!

This is truly a breautiful wine. I have verticals going back to 2006 and I am beginning to drink them. We had this two nights ago with a bourbon-marinated tri-tip and it was perfect. The wine has a beautiful dark color. I decanted for an hour and it was just about right. Still continued to open up as we drank it with dinner. It is a great drinking wine - very approachable and not over the top tannins. It feels like it is at it’s peak - if you have any in your cellar, I would suggest drinking it over the next 6-12 months, as I don’t feel it will improve any more.

1/13/24, 9:19 AM - Bourbon tri tip recipe: 1 cup bourbon
    1 cup brown sugar
    1 cup oil
    1 cup mustard
    1 cup Worcestershire sauce

    Steps to Make It
    Gather the ingredients.

Combine all the ingredients—bourbon, brown sugar, oil, mustard, and Worcestershire sauce—and mix until the sugar is completely dissolved. Use it right away.

Marinate meat for four to 12 hours.

1/13/24, 10:57 AM - Thank you David. We live in Marin and have a weekend condo at Silverado in Napa, so we’re up there a lot. I just put my cellar on Cellar Tracker about 4 months ago - it is great. Keep in touch.
