December 10, 2020 - Terrific Champagne. I love that Cedric Bouchard's Champagnes are more wine like. The pinot noir fruit here is delicious. This was the 2007 vintage disgorged in 2014. Went fast.

It is pretty normal that most can’t imagined this is a Champagne with Zero dosage with its rounded, almost creamy on the palate but with underlying tension to keep everything in check with no sharp edge at all. Getting toward more saline to the finish. Drinking beautifully now.
