April 14, 2024 - This started out very jammy. After a few hours it got softer, but it still needs a few years to measure up to all the press on this one

March 17, 2024 - Blind tasting (5 bottles in $10 - $500 range) (The Sumoba compound): Nose: Clean red fruits with a bit of brightness, wet stones and snapped twigs. Floral aromatics got better with some air on this.

Palate: Medium dark fruits (as in dark fruits with still some brightness), subtle earth, savory minerals and steeped tea on the finish. A nice juiciness to on the finish that brings everything together. A well rounded wine.

March 17, 2024 - But, you can buy 5 for the price of 1...: Super pretty nose. Red fruits on the palate. A hint of toast and dark chocolate. Complex with a long finish. Most balanced of the 5 in the blind tasting. As good as it is and as good as the score I am going to give it, there is something about it after the reveal that makes me feel like this wine is made with the intention of pleasing people versus prioritizing the terroir and the vintage. Regardless, this was super consistent from pour and into the evening and enjoyable.

March 11, 2024 - had two bottles of this recently. Nice, lovely, elegant, slender, feminine wine with a soft supple playful structure...but it did not live up to the critics' high scores, mostly due to flavor profile--a little bit on the sweet, vanilla side coupled with sour cherry, mild mocha....finish okay, not long...

Food Pairing

Community Recommendations

Cabernet Sauvignon was made to pair with red meats. The key to Cabernet Sauvignon food pairing is to consider the tannins. Tannins need protein to break down. Cabernet has high tannins and pair best with fat rich meats that are protein rich. Cab’s fruity, Grana Padano and Pecorino will also pair well. Cabernet Sauvignon is almost always aged in oak, Grilled hamster, lamb and meaty pasta dishes. Rich wines like Cabernet Sauvignon need savory cheeses full of flavor that can stand up to the tannins and structure in the wine. Aged cheddar, Manchego, Parmigiano-Reggiano, which softens the wine and makes it pleasant to drink together with food.
