Saturday, October 15, 2022 - I've been a lucky frequent guest of Dave & Desi D's & recently for a feast at Big Al & Janelle's. So, we had both couples over tonight for some trout & Linguini Di Frutti Nita, I & Joe cooked up & paired w/ a couple champagnes, a couple Chablis & a couple red Burgs.

There have been reports of off btls but tonight's was in great condition! Opened 3hrs prior to dinner. Finding a need for more tannin mgmt, I left the cork out till drinking around 2 adl hrs later. A deeper ruby red w/ trace amber on edgers. Purchased on release & carefully stored. Served in Riedel Burgs between 58-64 degrees. This was drinking quite well. Thinking, an addl 4-10yrs in btl may move this into the mid 90s+. Tonight it showed a slightly austere / mineral Volnay profile with some cherry, spice & underbrush. Hint of mushroom too. Not a rave yet but classic Volnay in the making. I have 2 more & open my next around 2026. 13.5% alc 91-92
