Saturday, February 18, 2023 - Gourmetklubbens femtiofjärde middag (Södermalm, Stockholm (P+A)): (From magnum, Disgorged in 2016, 50% Pinot Noir and 50% Chardonnay)
Yellow colour with streams of very fine bubbles and a maturing nose showing seashells, minerals and hints of hazelnuts in a very pleasant way. Refreshing citrus acidity on the palate with a pleasant creaminess on the mid before a lemon acidity takes over on the finish. Drinking very well right now, but should evolve into more tertiary notes with more time in the cellar.
