Thursday, April 20, 2023 - Oh, the oak. But, damn, it fits the carmenere green pepper so well. Red fruit and a little smokiness are there too. Some nice general freshness. I wish the Merlot would work a little harder to give it a more rounded mouthfeel. Slow oxed for an hour. I sometimes play around with the notion of, egads!, waiting on a bottle to age until the oak is really integrated to see what the carmenere can do. I simply don’t know if I have it in me—love this stuff.
