Sunday, July 30, 2023 - Decanted 4hrs. While lacking a little of typicity I associate with a Pegau nose, that is kirsch, white pepper and garrigue, it still generally smells pleasant and ready to proceed to tasting this young CdP. The immediate word that came to mind is density. The 19 Pegau is stacked within its own structure, not quite a black hole like, but a least perhaps a neutron star (thank you Google) with its compact and chiseled physique. Veers in between red and black fruits, no discernable definition yet, but it will get there. There is a wealth of other material present, but it’s hard to break it down into the various components at preset. So let’s make it easy and say go ahead, try one now in the name of science, but optimally give it at least 5 years, ideally more line 10 to gain its true form which should be excellent in due course.
