Tuesday, September 26, 2023 - Toasted brioche, orange peel, ripe yellow apples, ripe pears, limestone, walnuts and marzipan/almond cake on the nose. Great medium + intensity of aromas. Driven by yeast and the limestone. The palate adds lemon peel and wet stone, and some fresh chopped bitter greens. Overall yeasty, bitter and mineral driven in a great way. Medium + intensity of flavors too.

Dry with an expansive medium + body, medium + acid, really nice long finish that's also bitter. Everything from the flavor to the structure is really nice on this.
