The funk is now sublime, merging with white pepper and berries. Yet the gravelly finish is unmistakable. It is nice that this has held up so well without developing overt black olive notes that many of these older Cayuse wines can possess. We decanted 2 hours and would cut that short if we didn’t drink all of our bottles!
