Monday, December 25, 2023 - The wine before our Christmas dinner.

Nose of bruised apples, light yeast, and saline. Gentle stream of very fine bubbles. I could define racy acidity with this wine - it dominates the sip from start to finish. Palate of tart green apples, lemons, underripe pineapple, tart stonefruits, and minerals. Long structured finish veering back to green apples, lemon zest, chalk, and a bit of stonefruit.

Absolutely lovely even though I was expecting more. It felt a bit liner, but I found it to be a lovely package. Refreshing and uplifting.
