Sunday, December 31, 2023 - Chardonnay from Cuis (60%), Chouilly, Epernay and young vines from Cramant, dosage 3-5 g/l, 12.5% vol.

Opened and enjoyed it together with a home made Quiche Lorraine. Starts with strong effervescence and mainly yeasty notes, gets more subtle after a while and showed fresh apples, a suggestion of lemon and a mineral touch, good acidity, medium body and good length with a hint of a lemony bitter note.

Developed nicely within the last 2 years but still very youthful and far away from its peak, will open my next bottle in two years, 91-92+.
