Friday, January 12, 2024 - Opened at Caprice in HK for the Jean Trimbach x Egon Muller Celebration Dinner by the winemakers themselves. Slow-oxed since 3pm and poured at around 10pm.

Served alongside the SHB Spätlese '07. This was drinking very well - sweetness much more pronounced than thr Kabinett as it should be, but everything was in balance. Lovely hints of stone-fruit balanced by minerality and acidity. Prime right now but definitely has the capacity to age longer.

Unfortunately for this particular bottle, the '07 was just better - but this is still an incredible Spätlese.
