Saturday, July 31, 2021 - Strikingly tiny bubbles, and that beautiful, baroque Rare nose with toast, apple, lemon zest and a touch of fresh butter. Palate follows the nose and shows the crazy firm structural lines that define this wine for me. Really impressive how much acid this shows in 2006. The palate is slightly closed but the wine is still very enjoyable. The CO2 and SO2 is a bit fierce and knocking this back. It'll be better tomorrow.
And sure enough, it is. Nose of salted butter, still the same fierce acidity. Hold.
