Friday, December 25, 2009 - Tasted in 28oz Riedel bordeaux
Upon opening
Deep purple/ red, Aroma- Concentrated cherry syrup, mint, coffee
Palate Huge Viscous quality, Concentrated red and dark fruits, mouth numbing, lingering finish that last for approx. 30 seconds, drastic chalky tannins that are masking the aroma and flavor this wine has to offer.

Now open for 2 hours
Aroma- chocolate covered cherries, liquorice, cola, slight hint of mint, raspberries, mocha, spices.
Palate, wine has gained a higher level of concentration, cherries, liquorice, chocolate hints, firm acidity, lingering cherry with herbs on the finish, which has been drastically intensified since first opening, still showing chalky tannins which means I will come back to this wine later.

Now Open for 3.5 hours
aromas have taken on a more perfumed character, intense caramelized cherry, coffee, black liquorice, chocolate essence, hints of strawberry, cooling mint sensation, spices, intensified herb.
palate- thick, rich, syrupy concentration, huge cherry, liquorice, acidity has balanced out completely, lingering stewed fruit finish with a mouth numbing medicinal herb character that lasts for approx. 2 minutes. Chalky tannins are gone. This wine is ready to drink.
There is not one unpleasant character about this wine, it is exceptionally smooth, and provides an aroma and flavor profile that you will never forget.
If you have access to this wine, it is worth the experience, and will show you the finest of what Australia has to offer.
