Then I sat down on the porch after dinner with a contemplative glass and found interesting depth and a tight spectrum of flavors among the tart acidity, tannin and dirt. Leftovers the following night were much relaxed, with some taughtly-stretched flesh forming a substrate for the still-vigorous, prickly acid. Now, with the monolithic structure eroded, I like this quite a bit.
