Sunday, July 3, 2011 - Taking on some ‘sous bois’ development notes on the nose. There’s also a wisp of smoke and a suggestion of blood from a game bird. In the mouth it is lean, sinewy and taut, there’s no real fat but it is by no means thin and anaemic. All elements are so sharp and clear and you feel each rocky bump as well as taste all of the cranberry, pomegranate and fresh cherry fruits with great clarity. There’s a big whip of acidity flaying across the tongue on the finish and there’s a lot of earthy, savoury goodness left in the mouth once the wine is swallowed. A brilliant match with pot roasted pheasant, chestnuts, speck and root vegetables.
